This White Bean Gnocchi Recipe is perfect for a family of two. If you have a family of four, then just double the recipe.
For a different boost of flavor, substitute the can of Italian Diced Tomatoes for a can of Fire Roasted Diced Tomatoes.
For a kick on the spicy side, substitute the Mozzarella Cheese for Pepper Jack Cheese.
Ingredients:
- (1) Onion (Chopped)
- (2 tbs) Minced Garlic
- (1) 16oz Box of Potato Gnocchi
- (1) 6oz Bag of Baby Spinach
- (1) 15.5oz Can of Cannellini Beans (Drained)
- Alternative: (1) 15.5oz Can of Great Northern Beans (Drained)
- (1) 14.5oz Can of Italian Diced Tomatoes
- Alternative: (1) 14.5oz Can of Fire Roasted Diced Tomatoes
- (1) 8oz Bag of Mozzarella Cheese
- Alternative: (1) 8oz Bag of Pepper Jack Cheese
- Olive Oil
- Black Pepper
- Parsley Flakes
- Grated Parmesan Cheese.
Directions:
- Cook the Gnocchi in a pot as directed on box (Be careful to not overcook: 4 minutes top).
- Place the Onion into a large skillet with Olive Oil (Amount should be just enough to sauté with) and sauté them on medium heat.
- Just as it completes sauté, add the Minced Garlic and continue to sauté on medium heat.
- Drain the Gnocchi from pot.
- Add the Gnocchi to the skillet mixture and cook until golden brown.
- Add the Spinach and cook until the Spinach is wilted.
- Add the Cannellini Beans, Diced Tomatoes, and Black Pepper.
- Cook on medium heat for 10 minutes.
- Place the Mozzarella Cheese and Grated Parmesan Cheese (Amount varies to your preference) on top of the mixture.
- Give it a gentle stir.
- Remove from heat and let it sit (Covered) for 5 minutes to cool.
- Serve with Parsley on top and Enjoy !
