This Spicy Chicken Casserole Recipe is perfect for a family of four or less with the possibilities for leftovers for the next day.
If you want a Subtle Spicy Dish, then use a blend of Cheddar and Colby Jack Cheese as your choice of Mixed Cheese. If you want a little more Kick to your Dish, then use a blend of Pepper Jack Cheese.
Ingredients:
- (2-3 lbs.) Chicken Breasts
- (1) Onion (Diced)
- (1) 10.5oz Can of Cream of Chicken
- (1) 10.5oz Can of Cream of Mushroom
- (1) 10oz Can of Rotel
- (1) 11oz Bag of Tortilla Chips
- (1) 16oz Bag of Mixed Cheese
- Cooking Spray
- Sea Salt
- Cayenne Pepper
- Greek Seasoning
- Roasted Garlic Seasoning
Directions:
- Mix all 3 Cans together in a bowl to create the sauce and let it set for 1 hour.
- Preheat the oven to 350degrees.
- Boil the Chicken.
- Get a large baking dish and lightly spray the dish with the cooking spray.
- Once the Chicken is cooked, break it into small pieces.
- Crush the bag of Chips into pieces.
- Place half of the Chicken evenly across the baking dish.
- Then layer it with half of the Onions, half of the Sauce, half of the Cheese, half of the crushed Chips.
- Add a Dash of Sea Salt, Cayenne Pepper, Roasted Garlic, and Greek Seasoning (Amount varies to your preference)
- Then layer it with the rest of the ingredients as before: Chicken, Onion, Sauce, Cheese, and Chips.
- (Cover) with foil and bake for 45 minutes.
- Remove from oven and let stand for 5 minutes to cool.
- Serve and Enjoy!
