This Bacon Red Pepper Chicken Recipe is perfect for a family of two with the possibility of leftovers of two Chicken Breasts for the next day.

For a family of four, just add two more Potatoes and one more package of Broccoli.

If using Newman’s Own Garlic Vinaigrette & Marinade Alternative, then you can mix into the dressing Crushed Red Pepper Flakes, Honey, and Basil (Amount varies to your preference).

If using Regular Frozen Chopped Broccoli, then add seasonings to your preference such as: Butter, Black Pepper, Sea Salt, Minced Garlic and Italian Seasoning.

Suggestions on Baked Potato Ingredients for Toppings are as follows: Butter, Sour Cream, Green Onion, Bacon Bits, and Cheese (Amount and Types varies to your preference).

Ingredients:

  • (2) 8oz Bottle of Annie’s Red Pepper Dressing
    • Alternative: (1) 16oz Bottle of Kroger Roasted Red Pepper Vinaigrette Dressing
    • Alternative: (1) 16oz Newman’s Own Garlic Vinaigrette& Marinade
  • (1 lb) Package of Applewood Smoked Bacon
  • (4) Large Chicken Breasts
  • (2) Large Russet Potatoes
  • (1) 11oz Package of Green Giant Frozen Tuscan Seasoned Broccoli
    • Alternative: (1) 12oz Package of Regular Frozen Chopped Broccoli
  • Mozzarella Cheese Sticks
    • Alternative: Shredded Mozzarella Cheese
  • Cooking Spray (With Olive Oil)
  • Sea Salt
  • Olive Oil
  • Black Pepper
  • Italian Seasoning

Directions:

  • Marinate the Chicken in the Dressing for at least 1 hour (Preferably overnight).
  • Preheat Oven to 450 degrees.
  • Prepare Large Baking Dish with Cooking Spray.
  • Cut a slit into the Chicken Breasts and place a Cheese Stick inside and close it.
  • Take 2-4 pieces of Bacon and tightly wrap each Chicken, then place into the Baking Dish.
  • Pour the remaining dressing onto the Chicken in the Baking Dish.
  • Bake (Uncovered) for 35-45 minutes (Depending on your Bacon preference).
    • Remember to baste the Chicken every 10 minutes with the juices/dressing to avoid drying out.
  • While Chicken is baking in the oven, you can start preparing the side dishes. Place the Broccoli in a medium pot with a tad bit of water.

Broccoli

  • Cook/Steam the Broccoli (Covered) with the heat at low to low-medium for 15-30 minutes (Depending on your Broccoli preference).
    • If you have a steamer, then use that instead.

Baked Potato

  • Prepare your Baked Potatoes by taking a fork and create ventilation holes all over the Potato and cut the ends off.
  • Baste the entire Potato with Olive Oil, then sprinkle Sea Salt, Black Pepper, and Italian Season all around the Potato.
  • Place the Potatoes on a microwaveable plate and heat for 8 minutes.
  • Take the Potatoes out of microwave, cut the Potatoes nearly in half long ways.
  • Baste the inside of the Potatoes with Olive Oil, then close the Potatoes up as best as you can.
  • Place back into the microwave and heat for an additional 5 minutes.
  • Once complete leave in microwave until ready to serve the sides.

Conclusion

  • Once Chicken is cooked, remove from oven and let it sit for 2 minutes to cool.
  • Remove Broccoli from heat and let it sit for 2 minutes to cool.
  • Complete your dish by placing the Chicken, Broccoli, and Baked Potatoes onto your plate.
  • Serve and Enjoy!!!
